Pedro Aguilar Mendez is a first-generation coffee producer from the Aldea el Pajal region. Harvesting ripe fruit and removing defective seeds is one of the most crucial steps in ensuring quality. Grown at 1,725 meters above sea level, this lot is a blend of Caturra, Catuaí, and Bourbon varieties. After fermenting for 36 hours in ceramic tanks, the seeds are washed and then dried under the sun for 5 days, being turned regularly. Aware of the region’s water scarcity, Pedro designed a reusable water system, making a significant contribution to conservation. Carefully processed, the coffee offers a pristine quality in the cup. With notes of pumpkin, clotted cream, and a jammy sweetness, Las Peñas delivers a unique experience we highly recommend as a filter brew. Enjoy!

Region: Huehuetenango | Located in western Guatemala, Huehuetenango is a prestigious coffee-growing region known for coffees with vibrant acidity, complex fruity aromas, and a sweet, balanced finish.
Varieties: Caturra, Catuaí, Bourbon, Mundo Novo | Caturra, Catuaí, Bourbon, and Mundo Novo are among the widely cultivated Arabica varieties, known for their distinct growth characteristics and yield potential, as well as balanced, sweet, and complex cup profiles.

Process: Washed | A process in which the coffee fruit is separated from the coffee seed using water, followed by fermentation and washing. This method produces a clean and bright cup profile.

Harvest Year: 2026 | Sourced directly from our partner farms from the 2026 harvest.

Altitude: 1550–1680 masl | The elevation at which the coffee is grown. Generally, as altitude increases, coffee ripens more slowly, contributing to more pronounced acidity, intense aromas, and greater complexity in the cup.
