Lavender / Black Tea / Intense

This Guji bean, processed at the Alemayehu Tilahun washing station in the Lalesa region of Gedeo, Ethiopia, is grown at an altitude of 2150 meters. Harvested in early November, only the ripe fruits are hand-picked, left to sit in the region for 10 days, and then transported to the station. Wet fermentation lasts 72 hours; then, to separate the lots, they are rested in water for 2 hours and spread out in 2 cm thick layers and dried for 10 days. We are pleased to share with you a memorable Guji example, complex with distinct lavender aroma and black tea notes, light and silky on the first sip, and distinguished by its bright acidity on the finish.
