Pedro Aguilar Mendez is a first-generation coffee producer from the Aldea el Pajal region. Harvesting ripe fruit and removing defective seeds is one of the most crucial steps in ensuring quality. Grown at 1,725 meters above sea level, this lot is a blend of Caturra, Catuaí, and Bourbon varieties. After fermenting for 36 hours in ceramic tanks, the seeds are washed and then dried under the sun for 5 days, being turned regularly. Aware of the region’s water scarcity, Pedro designed a reusable water system, making a significant contribution to conservation. Carefully processed, the coffee offers a pristine quality in the cup. With notes of pumpkin, clotted cream, and a jammy sweetness, Las Peñas delivers a unique experience we highly recommend as a filter brew. Enjoy!
